Product Description
D-Tagatose is a naturally occurring rare monosaccharide, which is a ketose form of galactose and an epimer of fructose. The sweet taste characteristics are similar to sucrose, and the heat generated is only one-third of that of sucrose, so it is called a low calorie sweetener. Tagatose has excellent nutritional characteristics such as low calorie value, zero glycemic index, blood glucose passivation, non caries properties, prebiotic effects, and antioxidant activity.
It is a type of lactose that is hydrolyzed from lactose to obtain galactose (as lactose is a reducing disaccharide formed by the combination of galactose and glucose). Galactose is an isomer of glucose, which is also a hexose. It is then isomerized by an isomerase to convert galactose into a keto containing hexahexulose.
Character: A hexaketose, which is an epimer of fructose. Molecular formula C6H12O6, relative molecular weight 180.16. There are two forms, left-handed and right-handed, commonly used as left-handed D-tagatose. White odorless crystalline powder, sweet in taste, with a sweetness of 92% of the same amount of sucrose, but producing only 1/3 (1.5 kcal/g) of sucrose. Its melting point is 132-135 ℃, and its 1% aqueous solution [alpha] D20-6 ± 1 ° (c=5, H2O) is soluble in water with a solubility of 58.3% (20 ℃) and 62% (30 ℃), almost insoluble in ethanol and methanol. Relatively stable to heat, with a glass transition temperature of 15 ℃, easy to crystallize, low moisture absorption, and strong moisturizing properties. Strong acid resistance, stable within the range of pH 2-7. Easy to undergo caramelization reaction and Maillard browning reaction. Natural tagatose is mainly present in dairy products such as yogurt and milk powder.

Physiologic Function:
In 2001, FDA confirmed the safety of D-tagatose and approved it as a GRAS product, which can be used as sweetener in the food and beverage industry as well as in pharmaceutical formulations. In the same year, the JECFA of the United Nations and the World Health Organization recommended D-tagatose as a kind of new low calorie sweetener that can be used as food additive.
1. Used for food
The safety and production of tagatose have been approved by more than 30 countries including China, the European Union, the United States, Australia, New Zealand, and South Korea, as well as WHO/FAO and the International Codex Alimentarius Commission, with no restrictions on its daily intake and use.
2. Used for pharmaceuticals
Tagatose has completed the phase III clinical trial for the treatment of type II diabetes and the preclinical trial of anti triglyceride as authorized by the US FDA.
3. Other uses
Tagatose has been approved by the US FDA as a medicinal excipient for throat moistening tablets, over-the-counter diabetes cough syrup, chewing antibiotic tablets, non steroid anti-inflammatory drugs and paediatric drugs. The US FDA approves tagatose as a substitute for sucrose and other sweeteners in toothpaste, mouthwash, and cosmetics.
